Honey colours: the sweetest palette
Despite what most of us think as honey colour, when it come to its description and sensory analysis, things get more complicating yet exciting. Different colours in honey refer to different plant origins, therefore there are dozens of compilations and differences.
As a general rules, blossom honeys and more light. Acacia honey, orange honey and very light almost colourless. Sunflower and thyme honey are light amber to amber, whereas heather honey is darker, almost light beige.
Forest honeys are definately darker. Pine honey is hazel, fir honey is typically brown, oak tree honey is dark brown, seeming blackish.
During a visual assessment, we first refer to the visual aspect, that is whether the honey sample is liquid or crystallized. Then, we describe the appearance, if there is phase separation, impurities, irregular crystallization and other deficiencies.
Lastly, the colour description is usually the most challenging one. The intensity varies from very light, light, medium light, to medium dark, dark, very dark.
